Spiralized Zucchini Nest Eggs
It’s not pasta spaghetti, it’s zucchini! But they are delicious, with fried eggs. Zucchini cut into spaghetti are in fashion… You can do it with a spiralizer or a mandolin, but they are even sold filleted like this in many supermarkets, vacuum-packed.
You already know that there are zucchini in the markets all year round, because they come from greenhouses, but in summer they are in full season and with all their flavour.

Spiralized Zucchini Nest Eggs
Ingredients
- 2 Eggs
- 1 Zucchini spiralized
- Red chilli flakes
- 1/2 tbsp Olive oil
- 1 1/2 tbsp Butter
- Dry parsley
- Salt to taste
Instructions
- Wash the zucchini, remove the tips and cut them into spirals with a spiralizer, or into thin, long strips with the help of a mandolin or peeler.
- Heat up oil and butter in a pan. Add the zucchini to the pan and lightly sauté just until softened, about 1 minute.
- Using a spatula, make a small well in the middle of zucchini and crack eggs into the well. Sprinkle seasoning on top.
- Cover and cook for about 2 minutes. Until the whites are set and the yolks are still runny. Serve this healthy and delicious breakfast.
