Ingredients
  

  • 2 Eggs
  • 1 Zucchini spiralized
  • Red chilli flakes
  • 1/2 tbsp Olive oil
  • 1 1/2 tbsp Butter
  • Dry parsley
  • Salt to taste

Method
 

  1. Wash the zucchini, remove the tips and cut them into spirals with a spiralizer, or into thin, long strips with the help of a mandolin or peeler.
  2. Heat up oil and butter in a pan. Add the zucchini to the pan and lightly sauté just until softened, about 1 minute.
  3. Using a spatula, make a small well in the middle of zucchini and crack eggs into the well. Sprinkle seasoning on top.
  4. Cover and cook for about 2 minutes. Until the whites are set and the yolks are still runny. Serve this healthy and delicious breakfast.
