Wash the zucchini, remove the tips and cut them into spirals with a spiralizer, or into thin, long strips with the help of a mandolin or peeler.
Heat up oil and butter in a pan. Add the zucchini to the pan and lightly sauté just until softened, about 1 minute.
Using a spatula, make a small well in the middle of zucchini and crack eggs into the well. Sprinkle seasoning on top.
Cover and cook for about 2 minutes. Until the whites are set and the yolks are still runny. Serve this healthy and delicious breakfast.
