- 1 Cup Almond flour
- 1 Tbsp Xanthan gum
- 1/4 Tsp Salt
- 1/4 Tsp Baking powder
- 1/2 Tbsp Olive oil
Instructions
Method:
- In a large bowl, mix almond flour, xanthan gum, salt, baking powder.
- Then add the oil and make the dough with water.
- Knead the dough for at least 2 minutes (this helps the xanthan gum bind the dough). Once well combined, cover the dough with cling film/plastic wrap. Set aside at room temperature for 10 minutes.
- Once rested, split the dough into 6 even balls.
- One at a time, take the dough balls and roll them between two pieces of parchment paper, cut them into small circles.
- In a large pan, over medium heat, cook all the roti/tortillas as shown in the video.
