  • 1 Cup Almond flour
  • 1 Tbsp Xanthan gum
  • 1/4 Tsp Salt
  • 1/4 Tsp Baking powder
  • 1/2 Tbsp Olive oil

Instructions
 

Method:

  • In a large bowl, mix almond flour, xanthan gum, salt, baking powder.
  • Then add the oil and make the dough with water.

  • Knead the dough for at least 2 minutes (this helps the xanthan gum bind the dough). Once well combined, cover the dough with cling film/plastic wrap. Set aside at room temperature for 10 minutes.
  • Once rested, split the dough into 6 even balls.
  • One at a time, take the dough balls and roll them between two pieces of parchment paper, cut them into small circles.
  • In a large pan, over medium heat, cook all the roti/tortillas as shown in the video.
