In a large bowl, mix almond flour, xanthan gum, salt, baking powder.
Then add the oil and make the dough with water.
Knead the dough for at least 2 minutes (this helps the xanthan gum bind the dough). Once well combined, cover the dough with cling film/plastic wrap. Set aside at room temperature for 10 minutes.
Once rested, split the dough into 6 even balls.
One at a time, take the dough balls and roll them between two pieces of parchment paper, cut them into small circles.
In a large pan, over medium heat, cook all the roti/tortillas as shown in the video.
